In order to obtain this unique cuvée, Nicolas Alziari has hand-picked olives from olive several centuries trees "cailletier" variety.
For this amazing product, we only collected the "flower of oil". This nectar can only be obtained in our mill which uses a method almost disappeared in the world. This know-how consists in slowly crushing the olives with a stone wheel, then adding spring water in order to extract its oil.
Thus, the absence of pressure allows this rare technique, with very low yield, a greater concentration of aromas. Guaranteeing the most noble traditional values, the maison Nicolas Alziari carries in it the assurance of quality and durability.
Nose: subtle perfume of freshly crushed olives.
Taste: delicate aromas of gable, almond and artichoke
Use: To be tasted when dressing on a fish, meat or simply on a slice of country bread.
