The way olive oil is stored is essential to preserving all its flavor and nutritional qualities. A metal can is a particularly suitable container. Iron offers two major advantages: it effectively protects olive oil from light, the primary cause of oxidation, and ensures safe, risk-free transport. Furthermore, this material does not alter the oil’s taste in any way and does not impart any metallic flavor.
For optimal preservation, olive oil should be stored away from light and heat. It is best kept in a cool, dark cellar, or in the kitchen for small containers intended for daily use. Like wine, olive oil does not tolerate temperature fluctuations well: it is therefore recommended to store bottles in lower cabinets, which are less exposed to heat, and to keep them away from light sources such as windows.

The story behind...
It all began several decades ago, when the Alziari family set out to create an exceptional olive oil. From this passion was born a precious nectar: the Cuvée Prestige. Fruity, delicate, and well-balanced, it captivated even the most refined palates… but its destiny was to be linked to an iconic figure in French history.
Every summer during the postwar years, Madame Yvonne De Gaulle, the General’s wife, would choose the South of France as her retreat. In the narrow streets of Old Nice, she would quietly make her way to the Nicolas Alziari boutique. There, surrounded by the scents of the Mediterranean, she would find the Cuvée Prestige, which she was particularly fond of.
To her, this oil was more than just a condiment: it was a promise of refinement and excellence that she brought to the table to enhance family meals under the summer sun. It is said that she spoke of it as a treasure of French cuisine, a find she never failed to bring back from her trips to Nice.
Thus, the history of the Cuvée Prestige has been enriched by a unique distinction: that of having won over the discerning palate of Madame De Gaulle, and, through her, of having forever inscribed its name in France’s culinary heritage.
