Our story

Founded in Nice in 1868, Maison Nicolas Alziari has embodied the excellence of Mediterranean olive oil for more than five generations. Born around a historic mill nestled in the heart of Nice – still in operation today – the brand has built its reputation on rare artisanal expertise, passed down and preserved over time.

Taken over by twin brothers, passionate heirs to this family adventure, Maison Alziari has successfully embraced modernity without ever denying its roots. They have developed a contemporary vision for the brand, affirming its identity, its fine wines and its high standards of quality, while preserving the soul of the craft: respect for the fruit, time and terroir.

Today, Alziari cultivates nearly 200 hectares of olive groves between Nice and Provence and controls the entire production chain, from tree to bottle. The brand is now available in more than 30 countries, exclusively in delicatessens and gourmet restaurants and hotels.

A veritable institution, it combines the production of its own oils with the art of blending, a subtle skill that has forged its reputation. Each creation is born from a precise balance between varieties, origins and intensities, the House's emblematic signature.

An independent and committed company, Alziari continues to write a story where tradition and innovation go hand in hand, in the service of taste and authenticity.


 

AN ETERNAL HOME

The olive tree is a symbol of eternal life. Its deep roots and silvery foliage have always been a source of inspiration for Maison Alziari. Our story is one of a mill, passionate families and generations who have continually reinvented the art of olive oil production.

1868
The origins

In the archives, a forgotten mill appears: that of the Madeleine district in Nice. Abandoned for years, it awaits its destiny.

It is there that César Martin, son of a family of launderers, decides to change lanes. He bought this old mill in ruins, called the Santa, and built a new establishment. Quickly, his oil seduces individuals as well as professionals: the adventure begins.

1900
Visionary

To the next generation, the torch passes to his son-in-law, Nicolas Alziari.

Aware that he must distinguish himself in a region where only one variety is grown – the cailletier –, he dares the improbable: apply to olive oil the art of blending, as we do for wine, champagne or chocolate.

Collecte des variétés d’olives à travers l’Europe et invente une signature unique. Ces assemblages d’exception deviendront la renommée de la Maison.

1920-1936
Rooting

With his wife Jeanne, Nicolas opens a first shop on rue Gubernatis, then their daughter Pauline inaugurates a second on rue Saint-François de Paule, in the heart of Cours Saleya.

This shop will become the emblematic address of Alziari: a place where Nice discovers the great olive oil vintages.

1955
a woman of character

When Nicolas disappears, Jeanne takes over the mill. This is not a first: already, during the Great War, she had put him back on his feet alone, while her husband was at the front. Woman of conviction, she pursues the adventure with her son Ludovic.

1970-1980
Transmission and expansion

The relay then passes to Jean Nègre, grandson of Nicolas, then to his wife Andrée. Together, they diversify the range and transform Nicolas Alziari into a true gastronomic reference in Nice, well beyond olive oil.

1991
New age

At the time of the Gulf War, Ludovic, without a successor, sells his mill. Jean Nègre, close to retirement, also withdraws.

It is Gilles Piot, a member of the family, who takes over the two establishments and ensures the continuity of the House.

2005
Renewal

A vast restoration plan for the mill is launched. Excellence becomes the rule: more than 130 products, about ten cuvées, worldwide recognition.

Our oils then join the shelves of the most prestigious delicatessens.

2013-2018
Between tradition and innovation

The House puts ancestral methods back in the spotlight, explores new wines and begins its biological conversion.

In 2018, our estates extend to 60 hectares and a first gold medal at the Concours Général Agricole comes to reward this patient work.

2019
New generation

David et Vincent, après 14 ans auprès de leur père Gilles, reprennent le flambeau et insufflent une énergie nouvelle à l’entreprise familiale.

2022
Living history

Our olive groves welcome sheep to practice eco-grazing. A natural and poetic way to maintain the land, while reinforcing our commitment to the environment.

Birth of Baiata, our own jam shop in the heart of Nice

2023 
A major turning point

Acquisition of the Mas des Bécasses, 160 hectares in Provence, where we plant more than 100,000 olive trees. A promise: move towards 100% French and organic production.
